主役である料理に寄り添う日本酒であること。料理と共にお楽しみ頂ける日本酒であること。料理に添う酒である為には、日本酒の旨味があり調和のとれた酸のある日本酒でなくてはならない。吟醸ならば料理を邪魔しない、そんなほのかで上品な吟醸香のある日本酒。それが私達の造り出す遊穂というお酒です。

　日本酒には欠点とされる味わいがありますが、私たちは欠点とされるそれらの味わいも、日本酒の味を作る大事な要素と捉えています。それらを抑えるのでは無く、出るものは出した上で、全体のバランスを上手く調製することで、味のバランスを取り、その味に幅と深みを与える事ができる。こうした酒の方が料理に合う日本酒に仕上がるのです。

　遊穂の純米酒は火入れの後、暗室にて常温で瓶貯蔵されます。この熟成の工程で本来の日本酒ならではのまろやかな味に仕上げることが出来ます。

　濃醇な味わいながら、キレと軽快な口当たりの遊穂は、燗をすることで更に膨らみのある旨味が引き出されます。能登の豊な風土に育まれ出来上がる遊穂は、料理に寄り添う酒造りを目指す我々の思い入れが詰まった日本酒です。

A sake that goes well with and can be enjoyed with food. For sake to be good company at dinner, it needs to have its unique umami combined with a balanced touch of acidity. If it’s Ginjo, it should have the subtle and elegant aroma that does not overwhelm the tastes of dishes. Our sake brand Yuho is made based on this philosophy.

　While sake is said to have some weaknesses in terms of flavor, we recognize even such flavor is an important component of what make up the taste of our sake. We are better able to make sake that goes well with dishes by bringing out the natural flavors, instead of subduing them, fine-tuning the overall balance and giving it depth and breath.

 The Junmaishu type of Yuho is bottled and then stored in a dark room at room temperature after being heat-processed. This ageing process is what makes it possible to develop the mellow flavor characteristic to sake.

 Rich in flavor yet with a tint of sharpness and lightness, Yuho expands further in umami by warming. Yuho, brewed in the distinctive climate of Noto, is an embodiment of our pursuit of making sake that pairs well with any type of food.
